An ancestral control
This is an essential point of our art. Toasting occurs in three steps.-Preheating : we preheat our barrels over an open oak flame.
-Bending : we carefully bend our barrels with fire, steam and water inside and outside of the oak making it flexible to pull the staves together with a specially made capstan.
-Bousinage : we custom toast our barrels depending on the demands of our customers.
Our toasting process is specialized and complex. It is a very important aspect of the ALLARY "savoir faire" as the toast modifies the oak character, impact and aroma.
We offer many different toasts including:
- Allary House Toast
- Allary Burgundy Toast
- Light Toast - toasted and vanilla nuances
- Medium Toast - toasted, vanilla and smoked nuances
- Medium Plus toast - more accentuated nuances than medium toast
- Heavy Toast - Spice and dark toasted nuances.
